My own recipe---Vanilla Protein-Packed MultiGrain Pancakes



Prep Time: 15 minutes 
Cook Time: 15 minutes 
Ready In: 30 minutes 
Servings: 4 
 
Ingredients:
1/2 cup quick cooking oats 
1/4 cup all-purpose flour 
1/4 cup whole wheat flour 
1 tsp. baking powder 
1 tsp. baking soda 
1 dash salt (optional) 
1 and 1/2 scoops of vanilla flavored protein powder 
1 cup low-fat or fat free buttermilk 
1 egg 
cooking spray 
1/8 cup chopped pecans or walnuts (optional) 
 
DIRECTIONS: 
1. Place the oats into a blender or a food-processor.  Grind until the oats are  a flour-like powder.   
2. Begin warming a non-stick skillet or griddle over medium heat.   
3. In a medium mixing bowl, combine the dry ingredients: ground oat flour,  all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and  protein powder.  Mix well.   
4. Add egg and buttermilk to the dry ingredients.   
5. Mix until all flour is incorporated.   
6. Let stand for a few minutes until the mixture becomes slightly bubbly.   
7. When a drop of water sizzles and evaporates almost immediately the skillet or griddle is ready.   
8. Spray skillet with cooking spray.   
9. Pour batter onto hot skillet.  Cover and let cook until bubbles cover the surface of the pancake. Depending on the heat of your skillet or griddle and how crispy you like your pancakes, this usually takes around 2 or 3 minutes.    
10. If desired, add the pecans or walnuts now, before flipping. 
11. Shake the pancake to make sure it slides easily.  Then flip with a spatula  or egg-turner.   
12. Cook another minute on the backside, until slightly browned.   
13. Then remove to a plate and continue with the rest of the batter.

1st day back..and Hawaiian Muffin recipe :)

Yesterday was the first day back to school. I am thankful that I had a place to go back to! By this I mean that I'm glad I have a long term job right now. It may only be for another month. I think Ms. Richards will be back in Feb.

Yesterday was a busy day. I went to school..and I kinda had a little bit of a headache. I really hated getting out of bed at 6:15 am. blah. But the day went by quickly.

I had to make myself exercise yesterday. I did a Jillian DVD finally around 6pm. I cooked dinner... Pineapple Baked Chicken, Wild Rice, and a Salad.

I also had 2 old yucky blackish bananas that I needed to use..so I made some Hawaiian Bread Muffins. I'm bad about making up recipes and not writing them down, so I'm going to try to recall what I put in them because they are really good. I dont really measure so.. I have to guess at the amounts.

Hawaiian Muffins
Prep time: 15 minutes
Cook time: 20 minutes
Makes 12 muffins
Bake temp. 350

Ingredients:
2 mashed ripe bananas
½ c. crushed pineapple
¼ c. walnut or macadamia pieces (opt.)
1/8 c. orange juice concentrate
¼ c. coconut, toasted (opt.)
1/3 c. canola oil
¼ c. Splenda, granulated
¼ c. dark brown sugar
1 egg
1 c. oats, quick cook
½ c. whole wheat flour
½ c. all-purpose white flour
1 tsp. baking soda
½ tsp. salt

Directions:
1. Preheat Oven to 350 degrees F. Lightly spray muffin pan with cooking spray.
2. In a medium bowl, mix bananas, pineapple, walnuts, orange juice concentrate, and coconut.
3. In a small bowl, mix canola oil, splenda, brown sugar, and the egg. Combine the two mixtures in the medium bowl.
4. Add oats, both types of flour, baking soda, and salt. Mix until just moistened.
5. Pour batter into prepared muffin pan. Bake 20 minutes or until golden brown. Allow to cool on cooling racks.

*These are healthy and they turned out really good. If you’d like them really sweet, you can use all sugar and no Splenda…or add more sugar. Also you can use all all-purpose flour instead of the whole wheat. It’s not as healthy, but it would probably taste even better.

Mom's Sweet & Sour Meatball Recipe

Ingredients

meat mixture
2 lb lean ground beef or ground turkey
1 c. crushed cornflakes or grapenuts
3 eggs
2 tbsp. soy sauce
1/4 tsp. pepper
1/2 tsp. minced garlic
1/3 c. tomato ketchup
2 tbsp. minced onion

sauce
1 can jellied cranberry sauce
1 12 oz. bottle chili sauce
3 tbsp. dark brown sugar
1 tbsp. lemon juice

Directions:
Preheat oven to 350 degrees. Mix all meat mixture ingredients. Form into 2 inch balls and place into a 9" x 13" baking dish. Place into oven.

While meatballs are baking, add all sauce ingredients to a sauce pan. Cook over medium heat, stirring occaissionally until smooth. Remove meatballs from oven, pour sauce over the meatballs. Place meatballs back into oven for the remaining cooktime. Meatballs should cook for a combined amount of 30 minutes. (larger meatballs may require additional cook time and smaller meatballs require less time)

happy day!


I was in a bad mood yesterday...so today I'm making up for it. I'm in a MUCH better mood today! :)

I think my exercise routine helps me have my necessary endorphins... today I was on the treadmill for 45 minutes and in that span of time I was able to walk/run over 4 miles! I was very proud of myself. Yesterday I couldn't find the energy to do anything and it made me feel like crap.





Yesterday I didn't eat lunch... I think I might have eaten some Easter candy. Probably the reason I lacked energy!





Today I stopped at McDonald's on the way home from CB. I got a water, a parfait and a honey mustard grilled chicken snack wrap. Click here: McDonald's USA - Nutrition Facts for Your McMeal My meal had 420 calories, 11 grams of fat, 22 grams of protein, and 2 grams of fiber.





Tonight for dinner Jesse grilled some chicken breasts. I made a box of stove-top stuffing (Jesse LOVES that stuff!) and some Hot Corn.





Here's the recipe...

"Hot Corn"



Estimated time: 45 minutes
Number of servings: At our house, maybe 4
Ingredients:
1 bag frozen sweet yellow corn, thawed.


4 oz. (or 1/2 an 8 oz. block) of cream cheese


1/4 c. butter or margarine.


1/4 cup milk


1 4 oz. can of chopped green chiles


1 to 2 oz. diced pimentos


jalapeno peppers (if you like it hot!.. vary amount according to how hot you want it)


1/2 c. grated Cheddar cheese
salt & pepper to taste




Directions:


Melt on low heat: cream cheese, butter & milk Add chopped peppers and/or pimentos; mix well
Place thawed frozen corn into an 8x8" casserole dish. Pour cream cheese mixture on top.
Sprinkle cheese on top. Bake in oven at 350 for 30 minutes. Eat & enjoy

Cracker Barrel went pretty well today. (Aside from a Shift Leader named Linda getting onto me for not wiping my table...shes a spaz!) I worked 9 to 3 and made almost 60 bucks. I trained a girl today. Her name is Bronwyn. I know, strange name....but I like it. Shes a strange girl too, but she kinda grows on you.
Well.. I'll let you know if I find a good hair salon.
I guess I'm going to go search the Internet for a good hair salon in Winston...and then I'm gonna go upstairs to watch the American Idol results w/ Holli & Lester.
